Lime Cucumber Apple Salad

  • 1 can organic chickpeas (or 1 1/2 cups), rinsed
  • 2 cups chopped cucumbers, English or regular; peeled, seeded, and diced into 1/4 " cubes
  • 1 1/2 cups tomatoes, diced
  • 1 red, orange or yellow pepper (about 1 cup), diced small
  • 2 large scallions, chopped small (about 3/4 cup)
  • 3 tbsp fresh lime juice
  • 1 large Granny Smith apple, diced in a similar size to the cucumber
  • 2 tbsp olive oil infused with garlic
  • 1 tsp ground cumin
  • 1 tsp sea salt
  • 1/2 to 3/4 cup cilantro, chopped
  • 1 to 2 small hot peppers, seeded and chopped small (as desired).
Instructions
  • Combine chickpeas, cucumbers, tomatoes, bell pepper together in a medium bowl.
  • In a separate bowl, mix lime juice and chopped apples together.
  • Add the apple-lime mixture to the vegetable mixture along with olive oil, cumin, salt, cilantro and hot peppers.
  • Toss together and refrigerate for at least an hour to allow the flavors to blend.
